Salty Potato Chip Cookies with Pecans



For the past two weeks, the boys have been asking me to bake cookies. I didn't have all the ingredients, but then I stumbled across this idea when I was writing my weekly grocery list, and knew that I had to make them. Matt loves potato chips like I love ice cream (which is a lot) and Jack was a bit skeptical about me putting potato chips in cookies. But, I did it and it turned out amazing!! 

Salty Potato Chip Cookies with Pecans
makes 26 medium sized cookies

Ingredients 
1 cup (2 sticks) softened butter
3/4 cup packed brown sugar
3/4 cup granulated sugar
2 teaspoons vanilla extract
2 large eggs
2 1/4 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
4 cups crushed classic potato chips, divided 
1 cup chopped pecan pieces

Directions
1. Preheat the oven to 375 and prepare two baking sheets by covering with parchment paper.
2. Beat together the softened butter and both sugars with an electric mixer until light and fluffy (a couple minutes).
3. Add the vanilla and eggs - beat until just combined.
4. In a separate bowl, mix together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, beating on low until combined and uniform.
5. Stir in 2 cups of the crushed potato chips and the pecans. Put the other half of the crushed potato chips into a shallow bowl.
6. Grab heaping spoonfuls of dough and roll them into balls in your hands. Roll each ball through the remaining crushed potato chips, coating all sides before placing them 2 inches apart on the baking sheet.
7. Bake for 18 minutes and let cool slightly before removing from the baking sheet.
